Sweet Apple Baby Back Ribs

These ribs from PitmasterX are a great combination of classic American flavours, great for a 4th of July celebration. The cooking process is similar to our competition ribs but with a difference in times so they're cooked 2-2-1 hours. (2 hours smoked, 2 hours wrapped in foil and 1 hour back on the smoker).

Approx. Cook Time: 5 hours

Ingredients

BBQ Sauce

3 cups apple juice

½ cup apple cider vinegar

1 cup ketchup

½ cup worcestershire sauce

2 tbsp onion powder

2 tbsp garlic powder

1 tbsp ground black pepper

Rub

1 cup brown sugar

½ cup sea salt

½ cup paprika

1 tbsp Cayenne pepper

3 tbsp ground black pepper

2 tbsp onion powder

2 tbsp garlic powder

Other

3 racks baby back ribs

50g butter

Honey

Olive oil

Brown sugar

Method

Step 1

To start with you want to make your BBQ sauce by combining all the ingredients for the sauce in a saucepan and bringing to the boil, stirring to ensure the ingredients dissolve, let it simmer until it's a nice smooth consistency.

Step 2

Put all the rub ingredients into a bowl and mix well, then set up your smoker to run at 225-250°F

Step 3

Whilst your smoker is coming up to temperature, remove the membrane from the bone side of the ribs using a small knife to get under it and peeling it all off before covering the racks in olive oil and dry rub.

Step 4

Place the racks on the smoker for 2 hours, whilst that's going on, grab a sheet of foil big enough to wrap up each rack individually, and lay it flat on a table.

Step 5

Drizzle the foil with some honey, and sprinkle with brown sugar, once the ribs have been on for 2 hours, place them onto the foil, add some more BBQ sauce, and a nice lump of butter (about a tablespoon), before wrapping them up, avoiding any leaks. We recommend using a heavy duty foil.

Step 6

After another 2 hours has passed, take the ribs off the smoker and unwrap them, saving the juices by adding them to the BBQ sauce. Pop them back on the grill (no foil this time), and baste them generously with your BBQ sauce, leaving them on for another hour.

Step 7

Take your babybacks off the grill, place them on a chopping board and let them rest for about 15 mins before serving.
